Gluten-free brioche walnuts

This dish allows you to enjoy the soft rice flour bread, the mellow aroma of walnuts, and the soft sweetness of Maple.
Eggs and butter are combined with Maple and marzipan to give it a moist texture.
The caramelized Maple walnut on the surface is accented.

The 24th TOKYU HOTELS Cooking Contest

The main purpose of the "TOKYU HOTELS Cooking Contest" is to improve the skills and mindset of the cooking staff who will lead the next generation and create opportunities for growth.
The theme of this event, which was held for the 24th time, was "rice flour bread" with a view to providing food that everyone can enjoy with peace of mind, in light of the diversification of food culture and the rise of health consciousness.

32 hotels from all over the country participated, and as a result of strict judging such as the preliminary round and the final, this year's Grand Prix was won by Shinnosuke Fukushima of CERULEAN TOWER TOKYU HOTEL.

Kanazawa Fried Noodles

This dish was inspired by Jibuni. It is fried noodles made with duck meat, sudare-fu, komatsuna and chives harvested in Ishikawa, and shrimp. The aroma of Kanazawa Ohno soy sauce used for seasoning will whet your appetite.
*This was selected as the winning meal at the 72nd ALSOK Cup O-sho Championship, held at KANAZAWA TOKYU HOTEL on January 28th and 29th, 2023.

Kanazawa's local cuisine

The seasonal menu incorporates the bounty of the sea and mountains of Ishikawa, and we also offer a wide variety of local dishes, such as "Aimaze," an indispensable dish for New Year's osechi dishes and special occasions, and "Eggplant in Dutch Style," a light-flavored dish that is often served cold.

Pho

This is one of Vietnam's most famous noodle dishes, with a simple yet profound flavor. The flat rice noodles, similar to Japanese Kishimen noodles, have a smooth texture and are served in a light, carefully simmered soup.
It is deeply rooted as a national dish in Vietnam, and can easily be enjoyed for breakfast at food stalls and specialty shops.
