Date ingredients are served by the hotel's chef in an original menu exclusive to this fair!
Hokkaido A one-month limited fair that showcases new attractions through the creation of 'selected features' by Musashi Women's University students.

For both lunch and dinner, we will be incorporating seasonal ingredients from Date into our regular menu.

A wealth of appealing ingredients from Date

 

Date vegetables, grown in a mild climate with little snowfall, offer an excellent balance of freshness, sweetness, and aroma, and are cherished as a representative agricultural product of Hokkaido. Additionally, taking advantage of the land facing Funka Bay, the fishing industry has been thriving since the Edo period. In addition to abundant seafood such as scallops and salmon, the area is blessed with a variety of high-quality dairy products produced in environments suitable for grazing.
Each flavor, created by the characteristics of the land and the producers' dedication, is highly valued as an ingredient in its dishes.

Initiatives utilizing behavioral economics

 

In this project, students from the Yoshichi Seminar, who conduct research in behavioral economics and marketing at Hokkaido Musashi Women's University, will participate in planning and proposing ideas on POP displays and menu presentation methods in restaurants, presentation of dishes, and traffic flow design.
By incorporating the behavioral economics perspective of "what kind of information attracts people and what criteria they use to choose dishes," we showcase the appeal of Date-grown ingredients through "selectable features" that make people want to pick them up without thinking.

We offer seasonal Japanese cuisine incorporating fresh, seasonal ingredients from Date into our regular menu.
At the restaurant, we display the local Date ingredients used that day, allowing you to enjoy not only the taste of the food but also the entire dining experience, including the moment of choosing your ingredients.
